Domaine Jean Defaix Chablis 1er Cru Fourchaume is a masterful blend of Chardonnay grapes that produce a delightful flavour that is typical of the Chablis region. A family property which has been in Jean Defaix’s family for four generations and more than 150 years. Jean Defaix has built his house in an enviable position, entirely surrounded by vines, in the evocatively-named Serein valley. More recently he has had a brand new chai built with the finishing touches completed in 1990. Jean has acquired a great reputation as a producer of really top quality Chablis, deftly crafting wines of elegance and finesse. He is now handing over management of the estate to his equally able son-in-law Daniel Dampt who is one of Burgundy’s most celebrated producers, and he produces wines under both his own names and that of Jean Defaix, his father-in-law. The domaine covers 30ha of vines (16 of AOC Chablis and 14ha of 1er Cru, split across five vineyards. The house style produces clean, ultra-pure, wines with bright steely acidity and not so much as a hint of oak. Working with his two sons, Vincent and Sebastien, who have worked in New Zealand and Australia, the family produce clean, ultra-pure whites with bright steely acidity and not so much as a hint of oak. They craft wines that are true to the history of the region and reflect the rich heritage of the Defaix name.
Perfect complement to seafood dishes or simply enjoyed as an aperitif. This wine is best enjoyed when served chilled, ideally at around 12°C.
