Totally opaque black as night dark red core with a bright dark red black tinged hue. Heady scents of ripe black cherries and liquorice intermix with earthy leather nuances followed by spicy toasted cedar and pepper. Rich, very powerful and chewy the palate is saturated with ripe black cherry and liquorice fruits underscored by earthy leather characters, toasty cedar and spicy pepper. Firm, robust tannin structure. Long grippy aftertaste of black cherries, liquorice, earth, leather, toasty cedar and spicy pepper. A rich powerful Tempranillo with chewy tannins.

100% Tempranillo aged for 12 months in French oak barrels. In the heart of the Douro Valley (Spain), a precious terroir cultivated organically according to ancestral methods. Harvesting is carried out by hand and carried out in crates of 20kg. Vinification takes place in concrete tanks with cold pre-fermentation  maceration. The wine spends a long 4-6 weeks in vats. The wine is aged in oak barrels for 12 months, followed by concrete tanks.

Established in 2005, dominio del soto is based in sotillo de la ribera, at the heart of the Ribera del Duero wine region in the province of burgos in Spain. With 16 hectares of organically grown vineyards, Dominio del Soto combines terroir and knowhow in a traditional manner to create and barrel-age its roble and crianza wines.

Spanish wines have always been a favourite of Michel Chapoutier. It was therefore of no surprise that the company should look for a domain there. At the heart of the Douro Valley, Dominio Del Soto is one of the rare Spanish crops derived from organic farming methods applying ancestral practices. Mathilde Chapoutier firmly believes in the potential of this terroir and encouraged the wine company to invest in the vineyard. A few years on, and M. CHAPOUTIER has applied the necessary know-how, creating highly concentrated, well-rounded, fruity wines. The domain is currently being converted to biodynamic practices.

Revealed by Mathilde Chapoutier Sélection, the Dominio del Soto wines pair perfectly with both casual meals and fine dinners.

The vineyards are planted on old high-lying terraces (850-900m above sea level). Deep clay-limestone and even marly-limestone soil in certain plots with some pockets of sand. The vines benefit from a mediterranean climate, tending to continental, characterized by harsh winters and hot, dry summers with a significant variation between day and night-time temperatures.

These characteristics enable to produce highly concentrated wines. With its smooth character and juicy fruits, it pairs perfectly with hispanic cuisine or any type of grilled meats.

Deserves to be paired with a really big, juicy steak!
