Because bottles were expensive, they were re-used and often displayed the crest or initials of their owner.

As the 18th century progressed, bottles became taller and more cylindrical. The early bulbous ‘onion’ shape gradually evolved into a more elongated, straight-sided bottle with a longer neck. The first stage in this evolution was the appearance of the ‘mallet’ shaped bottle which had become well established in England by around 1730. Like their predecessors, the first ‘mallet’ bottles were squat in shape. Their sides were often tapered towards the shoulder rather than completely parallel. Bud burst occurred at the normal time towards the third week in March followed by good levels of rainfall in April and early May. At the end of May the vineyards showed low vigour, a result of the extremely dry winter and cooler than normal spring. Continued good weather during June and July led to the healthy evolution of the vines, although the smaller berries and bunches showed a low yield for the year. Vérasion occurred a little later than usual. An initial evaluation of the grapes in mid - August showed that they were still very low in sugar, but with high levels of acidity. The leaf canopies however, were in remarkable condition for the time of the year, allowing a continuous ripening of the crop to continue all the way through the harvest. As a result, picking at Quinta do Panascal started on the 20th September, Quinta do Cruzeiro on the 21st and the 2nd October at Quinta do Santo António. The vintage was briefly interrupted by some rain fall on the 24th September, but excellent weather conditions for the rest of the harvest prevailed.

Established in 1815, Fonseca belongs in the first rank of Vintage Port houses. It is regarded as one of the most stylistically consistent of the classic Vintage Port houses and its Ports have been made by five generations of the Guimaraens family since its foundation. This consistency derives not only from continuity of family involvement, and the knowledge and skill passed down from one generation to the next, but also a close link with the vineyard. The firm's three estates of Panascal, Cruzeiro and Santo António are the heart of the distinctive character of Fonseca's Vintage Ports. Fonseca's respect for the vineyard and the unique environment of the Douro Valley expresses itself in the firm's leadership in the field of sustainable viticulture. In 2006 it became the first house to offer a Port made entirely from organically produced grapes. Fonseca is the only Port house with four 100 Point scoring wines. Stand the bottle upright a few hours before decanting to allow the sediment to fall to the bottom of the bottle. We recommend the use of a Bi-blade corkscrew that will avoid breaking the natural cork, especially one that is older than ten years of age. Pour the wine in a slow, steady stream into a decanter, ensuring that only the clear wine is poured, leaving the sediment behind. Serve at 16ºC to 18ºC. Late Bottled Vintage, as the name suggests, is bottled later, remaining in wood between four and six years. The humid conditions continued into spring and early summer with lower than average temperatures combined with periods of rain. There were no significant periods of intense heat during the summer months. This ensured that the leaf canopies were in an exceptionally healthy condition and able to benefit from the warm weather that preceded the harvest.

The first two weeks of September saw constant daily temperatures of between 35ºC and 38ºC. These warm and dry conditions brought the crop to perfect maturity, advancing the production of sugar and phenolics while retaining the excellent natural acidity resulting from the relatively cool summer. Springs and wells that had always provided water dried up for the first time in living memory. Rain finally arrived at the end of August, and September was cool, with light rainfall. The harvest began on 23 September, with fully ripe bunches free from disease. Sugar levels were high in both the Upper and Lower Douro, while cooler temperatures favoured slow and steady fermentation. However, yields were more than 30% lower than last year due to the drought. On 29 September, persistent rain caused some rot, especially in the Lower Douro.

For many Taylor’s is the archetypal Port house and its wines the quintessential Ports. Family managed since its foundation in 1692, it has remained entirely dedicated to quality Port production throughout its history. Taylor’s owns three great vineyards in the Douro, Quinta de Vargellas, Quinta de Terra Feita and Quinta do Junco. All are categorised grade A – the highest possible rating. These three iconic properties, each occupying a distinct geographic location and with their own unique character, are the cornerstone of the company’s success and the main source of its unique and inimitable house style. Taylor’s holds one of the most extensive reserves of very old cask aged Port of any producer. They include a collection of rare Single Harvest Ports. These are Ports from a single year which age to full maturity in seasoned oak casks and display the year of harvest on the label. Taylor’s has decided to make a limited release, each year, of a Single Harvest Port made 50 years previously. The tenth in the series is the 1976 Single Harvest.

Taylor’s 1976 Single Harvest is an excellent accompaniment to many desserts. The bottle should be kept upright, protected from direct sun light and at a cool and constant temperature. The wine benefits from being served slightly chilled, between 12ºC to 16ºC. The particular qualities of this wine allow it to be enjoyed over an extended period of time once opened, without losing its freshness and vibrancy.
