White stonefruit, brioche, oystershells with a hint of white pepper. Medium-to-full-bodied texture, similar to a Ramen consistency. Fresh and soft acidity and gentle structured phenolics.
Bunch thinned and shoot trimmed. Conventionally farmed with drip irrigation. Picked in the cool of night, 18 hours of cold maceration on skins, pressed to tank, racked to barrel with light solids included. Wild fermentation in barrique (15% new) until dry, patrial malolactic fermentation (roughly 20%). 8 months on lees, 10 months total in barrique, 9 months bottle age.
