Introducing a lusciously smooth and intensely long VS Cognac from the Vallet family, makers of fine spirits at Château de Montifaud since 1837. Crafted with an eau du vie long aged in French oak, this is a meticulously made, complex brandy.

Lifted, floral aromatics with hints of honey. Smooth and warming with notes of pear and apple, nutty finish.

If you’re unfamiliar with Cognac naming convention, ‘VS’ stands for ‘Very Special’, and Cognacs with this classification must be made with eau de vie aged for at least two years. And ‘Petite Champagne’ refers to the vineyard site where the grapes were grown, the second quality enclave of the region. Unlike some other distillers, the Vallet family believe a quality spirit can only be created from a quality wine. So grapes are harvested at optimum ripeness before being transported to the cellar and pressed gently in as short a time as possible. After fermentation the wine is left to age on its lees for three months, before a double distillation in copper stills. It’s then transferred to new French oak to mature to fresh and floral perfection.

Aged for a minimum of two years, Chateau de Montifaud VS Cognac is a Petite Champagne blend that delights with its freshness and youth. Aromas of pears, apples, and a hint of linden flowers delight on both the nose and pala, making this an exceptional benchmark Cognac of the region. The chalky and slightly rocky soils of the Petite Champagne produce rich, acidic Ugni Blanc grapes that are perfect for making quality eaux-de-vie. While very similar to the produce of the Grande Champagne, they are also slightly less refined and with an underlying rustic character. Petite Champagne Cognacs are equally great young - as expressed in this VS bottling - or aged for decades.

The Vallet family have been the guardians of Château de Montifaud Cognac for six generations and are today responsible for 125 hectares of vineyards across the Grande and Petite Champagne regions. Specializing in traditional production methods, the family chooses to distil only Ugni Blanc grapes and age their Cognacs much longer than required by law.

Although this expression is wonderful at room temperature, you could also add some ice or a splash of cold water for a lighter taste sensation. If you’re feeling particularly experimental, try it with a mixer or as a base for a special cocktail.
