Onannon is the venture of Sam Middleton, Kaspar Hermann and Will Byron, who donated the last two or three letters of their surnames to come up with Onannon. They have many things in common, not the least working vintages at Coldstream Hills – Will for six years, Sam for two (before ultimately returning to the family winery, Mount Mary) and Kaspar for one. Since then they have bounced between vintages in Burgundy and Australia. Vineyards were planted in 1995 in the Gippsland Lakes, a rural region to the east of Melbourne. The Yarra Hills has become a magnet for funky cult winemakers embracing the ultimate challenge - producing a great Pinot Noir. Their primary goals for winemaking are simple - source good grapes from healthy vineyards and make a wine that speaks a little of themselves and a lot of the place. The decision to make wine together was conceived over a few beers while they were studying wine science at Charles Sturt University. It seemed a natural evolution, both in their professional careers and their friendships. After two years of searching they found a vineyard that suited the style of Pinot Noir they wanted to make. Together they picked and then fermented three barrels of wine in a friend’s small winery.

They have since moved the production to a small purpose built winery on the Mornington Peninsula and now source fruit from the Peninsula, South and East Gippsland, increasing production from 80 dozen in 2008 to 650 dozen in 2013, while constantly maintaining a diligent, hands on approach.

From the Lightfoot vineyard established in 1998, this old site is planted to the MV6 clone in the Gippsland Lakes District. The soils are Terra Rossa over limestone.

The fruit is all hand picked then fully de-stemmed leaving whole berries intact. The fruit begins its own fermentation with wild yeasts and is plunged twice daily. After fermentation the wine spends 11 months in oak, 30% of which is new, racked once and then a very light filtration pre-bottling to polish the fruit and focus the wine. 10 months in barrel.
