Pueblo del Sol is owned by the Familia Deicas and is run by Santia-go Deicas who represents the third generation of the family. The teams quest is to strike the perfect balance between tradition and innovation in order to produce the best wines. The winery is located in the southern Canelones region which has large diurnal temperature shifts influenced by the Atlantic Ocean and the cool winds from the river Plate’s estuary. These conditions allow for dry farming of the grapes. The Canelones region is characterised by its chalky clay soils and gently rolling landscape, which allows good water drainage and guarantees perfect conditions for high quality wines.

Grapes were grown on a single vineyard site at sea level altitude, where the average age of the vines is 15 years old. 3200 vines per hectare are planted on calcareous clay soils, yields average 55hl/ha. Grapes were hand harvested during the day in the third week of March.

Grapes were double sorted, destemmed and crushed. A pre-fermentation maceration occurs for 3 days at 24°C to aid with colour and fruit extraction. Fermentation is initiated using cultured yeast in stainless steel tanks and it lasted 10 days at 22-26°C. The wine was left to macerate on its skins for a further 3-5 days at 24°C. Malolactic fermentation was completed in the tanks and the wine was filtered and bottled.

Ideal accompaniment to red meats, pasta and casseroles and simple cheeses.
