This partially barrel-fermented Sauvignon Blanc is made using grapes sourced from the Stags Leap, Oakville and Rutherford areas. The warm yet still temperate growing conditions produce fully ripe grapes which result in a full-bodied almost creamy textured wine with pronounced aromas of jasmine and orange blossom, citrus and tropical fruit such as lime and lychee, honey with subtle oak nuances on the palate.

Vinification of Mondavi Fumé Blanc After harvesting the grapes, they are immediately taken to Robert Mondavi's wine cellar and pressed there as a whole. The must is divided before fermentation: one third is fermented in stainless steel tanks - two thirds are fermented in French oak barrels. This gives it its creamy structure and the aromas are beautifully integrated. 85% Sauvignon Blanc, 15% Semillon

After the fermentation process is complete, this white wine is aged in French oak barrels for 4 months on the fine yeast. The fine yeast store is regularly stirred (Bâtonnage).

Serve this dry white wine from the USA well chilled as an elegant aperitif. Or accompany this wine with smoked salmon with lemon butter, fresh pasta with seafood or with goat's cheese.
