Ripe fruit, some toasted notes and an interesting hint of caramel.
In the mouth it is full, pleasantly bitter, creamy, red fruit very evident in the finish that pleasant bitterness returns.
Between August and September the grapes are harvested, selected by hand and immediately pressed whole in a soft way. After a short passage on the skins (<4h) to naturally release the colour, the must obtained is fermented in steel at a controlled temperature (15/18°C) with the use of selected yeasts. In spring, the qualities of wine considered to be the best are blended and, after a few days, refermentation in the bottle takes place as required by the Classic Method. After at least 24 months of absolute rest in the stack, the bottles pass on the pupitres for the "peak" phase, which lasts about a month and a half. Finally, disgorgement is carried out with the addition of liqueur de dosages.
