Vines of average age 40 years. It is important to understand the subsoil and originality of the different parcels that make up the cuvée ‘Terroir’, seeking to be above all the full expression of Chardonnay. On the palate is developed the freshness of minerality peculiar to Pouilly-Fuissé.
This pure, precise cuvée represents Pouilly terroir where clay and marls bring fullness and Solutré terroir where limestone gives minerality.
Domaine Sève is a small family property that creates wines that make big waves.
Their Pouilly Fuiseé 'Terroir' is arguably the young upstart of the range, with racy acidity and zippy ripe citrus fruit. Yet it's still a complex and age-worthy wine and excellent value compared to Domaine Sève's recently promoted 1er Cru wines.
Sylvie and Jean Pierre Sève, the current generation, use oak barrels carefully not only to add flavour but also to allow an exchange between oxygen which patiently develops the wine.
Perhaps opening up immediately between 10° and 12°, it is ideal as an aperitif, with charcuterie cold meats, shellfish, salad starters, quiches, grilled fish and white meats, goat cheeses, hard-rind tomme cheese.
