Riesling fermented in the bottle to give a natural fizz, this lipsmacking dry wine is cloudy because of the yeast lees left in the bottle, giving an extra nutty richness.
Fifth-generation winemaker, Simon, founded the business in 2004, a century and a half after his great-great-grandfather, Joseph Gilbert of Pewsey Vale Estate, established Eden Valley’s first cool-climate vineyard and planted its first Riesling in 1847. He received numerous Colonial and International Awards for excellence. The Pewsey Vale Vineyard and Winery was handed down over generations until the site was sold in 1923.
Simon and his son Will combine their passion and innovative spirit as they follow in the footsteps of their ancestors. Artisans of cool climate wines, together they produce elegant, pure and structured wines reflective of variety, site and season. The family legacy lives on through our Gilbert + Gilbert collection, which reflects the same fragrant, delicate, and pure characteristics of Eden Valley’s first wines in the 1850s.
A traditionally wet Autumn and Winter was followed by a mild dry Spring, providing excellent conditions for fruit set. A dry mild Summer followed, with the exception of sigificant rain during January, providing a much needed revitalisation to our Vineyard, perfect timing for veraison. Cool conditions from February to April provided near perfect ripening conditions resulting in optimal ripeness & higher naturally acidity.
To maintain the inherent fruit qualities, these grapes were harvested in small lots in the early hours of the morning. The grapes were then placed in ½ to 1 tonne bins only, to enable better quality control and detect any fruit variations.
The fruit was destemmed, pressed and then racked, where fermentation was then initiated. Fermentation was monitored, and the temperature was maintained between 13-16°C to allow for a steady controlled ferment. Once the baume level had dropped by 2/3 of its value, the residual sugar was then regularly measured as we were aiming to bottle at around 12.5 grams/litre. We then waited for the fermentation to finish before releasing.
It is up to you how you would like to drink it; some like it cloudy, some like it clear. Either softly roll or not - before opening with care!
Ideal as an aperitif with olives and prawns or Thai salads.
