Springfield Estate Méthode Ancienne Chardonnay is in the ancient style of Burgundy, rarely is this technique with wild yeast and no fining/filtration used in the new world. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last (we hope) a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character!

I was lucky enough to try this at the Sprngfield Estate outside Capetown this year (2022). It's a product of the cold maceration process so, rather than being pressed, the berries are instead chilled to a point where the skins split, yielding up their juice. The natural yeast present in the bloom of the skins is the only yeast used in the process. I'm absolutely delighted to find a UK outlet from this remarkable winery. This is a genuinely distinctive, delicious chardonnay.
