Appassimento is an Italian method used to produce full-bodied and juicy wines. In Appassimento, also known as Passito, freshly picked and healthy grapes are dried on straw mats and only then are they pressed. This wonderful mixed case brings together 5 red and one white Appassimento wines.

Anyone who has ever tried a raisin knows the concentrated power of the grape. With the Appassimento method, Italian winemakers succeed in transferring this concentration into wines. First, carefully selected and healthy grapes are spread out on large straw mats. Whether outdoors or in dry attics - the grapes remain here for weeks or even months. The “raisinisation” is only interrupted by occasional turning to prevent mold from forming. Over the weeks, the grapes dry out, the water evaporates. Up to 50% of the weight of the grape is lost. What remains is sugar and concentrated aromas. Once the desired sweetness level is reached, it's time for pressing. 

But did you know you can also use the method for white wines? It’s very unusual to find a white wine made appassimento-style. This method is best known for making decadently rich reds, like Amarone. Sicilian Grillo is a wonderfully aromatic and distinctly Italian white grape. It’s the perfect base for this style of winemaking. You won't be disappointed!

The case includes:

  • Appassimento Rosso Puglia, Botter

Here the Appassimento method is applied to the Negroamaro, Malvasia Nero, Merlot and Cabernet grapes from the Puglia area of South East Italy. Producing a wine that is full bodied, rich and complex. Lots of complex and fruity flavours with notes of ripe dark cherries, fresh herbs and vanilla.

  • Urban Park Appassimento

Bright berry and black cherry aromas, and a touch of spice. The palate has all of Valpolicella's appealing fresh cherry and ripe bramble fruit, along with added weight and complexity from maturation in oak. Supple tannins lead to a finish of delicate sweetness, offset by fresh acidity.

  • Miopasso Grillo Appassimento

A fantastic white wine find from Sicily. On the nose there are notes of dried fruits and nuts, with hints of oranges and grapefruit. The palate is soft and well-rounded, with touches of honey on the long finish. The colour is straw yellow with flecks of gold.

  • Appassimento, Paolo Leo Organic Passitivo Primitivo

Full-bodied and smooth it has a nose of ripe cherries and forest fruits with a touch of spice and chocolate notes. Dried fruits on the palate with autumns fruits, damson, red plums followed by a smooth lingering finish hints of sweet fruits and spice.

  • Tenuta Serranova Appassimento

Pronounced aromas of ripe black fruit, mocha and spice. The palate is plump and appealing with layers of ripe black cherry, bramble, dried fruit and coffee. Rich and mouth-filling with plump, sweet fruit balanced by fresh acidity.

  • Zensa, Nero d'Avola Appassimento

Zensa Nero d’Avola Appassimento is a rich and full-bodied red wine from Sicily, Italy. Crafted using the traditional appassimento method, the grapes are partially dried before fermentation, concentrating their natural sugars and intensifying the wine’s character.
