The manually harvested grapes are rigorously sorted in the vineyards and by optical sorting upon their arrival at the winery. Vinification in thermo-regulated stainless steel vats. Some of the batches undergo their malolactic fermentation in new barrels. The wine is then aged in French oak barrels, 30% of which are new.
