The rosé partner to the superb Mora Mora, Rosa Mora is cherry pink in colour, with bright reflections. On the nose, it offers loads of red fruits such as raspberry and strawberries. The most original characteristic is evident in hints of Mediterranean aromatic herbs. Very fresh and fruity with loads more of those red fruits showing through. A new Summer favourite?
Considered one of the great native Salento vines, Malvasia Nera has always shared the vineyard with Negroamaro and, in many cases, also the fermentative process in many appellations of Salento origin, including Salice Salentino DOC and Brindisi DOC.
Malvasia nera is one of the oldest indigenous grape varieties in Puglia and it is likely that it arrived in southern Italy starting from the Dalmatian coasts beyond the Adriatic Sea.
Paolo Leo, the owner of a historic winery named after him, started his business in the heart of Salento in Apulia, which is considered southern Italy. Today the winery has become a modern company with a completely computerized bottling line that is able to bottle 6,000 bottles per hour. The Leo family has been able to build a cutting edge and innovative company that is not only famous in Italy alone but in the entire world.
The harvest is carried out in the early hours of dawn, when the temperature is lower, to preserve freshness and aromas.
After harvesting, the grapes are cooled to 0 ºC and placed inside the soft press for about 4 hours in contact with the skins from where the characteristic "cherry pink" colour is extracted. The pressed juice, inside a stainless steel tank, ferments at low temperature for about 10 days before being aged for 3 months in stainless steel vessels.
The vivacity and elegance of black Malvasia in rosé give very great combinations in gourmet aperitifs. The fresh sip is given to appetizing fried fish. The exotic flavour of the wine guarantees a fascinating oriental pairing with sushi roll, mixed sashimi and fresh fruit.
