The wine has a light crimson colour and a bouquet of violets and roses with a spicy tobacco and tar foundation. It is elegant in the mouth with red berry flavours and supportive tannins giving way to great length.
Soumah of the Yarra Valley is a producer of fine wines from the region. A hidden gem located down a country lane, in the dress circle of the cool Warramate foothills of Gruyere. Soumah set out to make wine with the charm of northern Italy but the provenance of the Yarra Valley. Situated an average of 120 metres above sea level, the vineyard is elevated above the valley floor. The ancient sandy-clay loams with broken sandstone shape the small yield and define the detail in these precise, focussed expressions of Chardonnay and Pinot Noir.
After some research, Soumah planted numerous Nebbiolo clones on a north-west slope to give the fruit every opportunity to ripen slowly in the golden autumn sun. Grapes were gently picked the fruit and fermented the juice in tank. After fermentation, the wine was left on skins for 120-days to soften the tannins, then aged the wine in seasoned puncheons (500L barrels) for 24 months.
Juicy slow cooked wild beef stew with roasted winter vegetables and green beans, or a simple cheese platter with creamy taleggio.
