Selected batches of Pinot Noir fruit were gently destemmed and placed in small, open-top fermenters. Gentle plunging and pump over techniques were used, combined with warm fermentations to ensure the retention of bright fresh fruit characters. After pressing, the wine underwent malolactic fermentation in old French oak barriques and stainless steel.
