Notes of black olive tapenade and dark violets are underpinned by hints of liquorice and chocolate. Whilst supple tannins carry peppery red and black fruits through to a vibrant, expressive finish.
La Truffière was both vinified and aged in a large 60HL Foudre. The fermentation was temperature controlled and once up to temperature, was limited to no more than 24 degrees. This combined with a minimum extraction style of winemaking, almost leaning toward the “infusion” style, has created a wine open and fluid in its youth, yet with a capacity for ageing. A large part of this tank was used for the blends of Les Six and Côte Sauvage however during this blending session, this wine really stood out as the star of the show. We decided therefore, that we wanted to save a small part to create this new “Sélection Parcellaire” cuvée.
The perfect partner to grilled lamb. Great with hearty stews or dishes with Herbes de Provence. The wine's earthy, spicy notes also complement strong, aged cheeses.
