Pasión de Bobal is the result of a careful selection of the best grapes from south-east Spain's indigenous Bobal variety located in Camporrobles within the D.O. Utiel-Requena region.
Pale, 'Provence-style' pink in colour with fresh strawberry, redcurrant and white flower aromas with a hint of rose. Nicely-balanced with clean, bright acidity, some minerality adding palate weight, and red berries and cream on the finish.
The 67 hectare Finca Fuenteseca estate lies in Utiel Requena, a high, rugged plateau, nearly 1,000 metres above sea level just inland from Valencia. The combination of hot, dry summers, cold nights and poor, limestone soil make the area relatively free of vine diseases and so ideal for organic farming. The entire estate is now dedicated to organic production and producing blends combining indigenous and international varieties.
Bobal is grown in loam plaines that are rich in red lcay and miocence conglomerates. It ripens later than other varieties with young vines often used to make light fruity reds and rosé. Fruit yields are controlled in order to keep the natural ecosystem of the environment and organic practices are also employed, harsh chemicals avoided. Maceration of the grapes at very low temperature for 16 hours, in which the free run juice is obtained, which will be fermented later at controlled temperature.
