Spicy, characterful, southern red from vineyards in conversion to organic.
Intense, bright and ripe raspberry Grenache fruit balanced by peppery, savoury characters from the Syrah and Mourvèdre. Generous but properly balanced and underpinned with smooth, ripe tannins.
The domaine is in the south of the appellation cooled by the sea breezes of the Camargue and on an ancient raised river bed with galets roulés soil. The vines are 25 years old and yields around 50 hl/ha. Grapes are destemmed and fermented traditionally for 15 days to ensure a good balance of fruit and tannins.
Château l'Ermitage was founded in the XIth Century by the hermits of Sainte Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. We have a close relationship with owner Jérôme Castillon and he has been instrumental in some of our own wines; Savoir-Faire Mourvèdre is produced from his fruit, but produced by our winemakers in his cellar. Jérôme restricts the use of oak influence as much as possible and new oak is not used.
Perfect with Côte de Boeuf, lamb cutlets with rosemary, saussison sec, mature hard cheeses.
