Elegant and fine, this wine offers a tender style with notes of cherry, raspberry, freesia and peony. The aeration and finish are mineral. This wine is made from a blend of different hand-picked parcels on clay-limestone soils.
The grapes are destemmed and undergo pre-fermentation cold maceration to preserve the fruit's brilliance. Between 10% and 20% of the juice is matured in oak barrels.
Located in the northern part of the Sancerre vineyard, in the village of Sainte-Gemme-en-Sancerrois, the Domaine des Sardelles is a family estate producing terroir-driven wines in the Sancerre appellation and within the Val de Loire IGP. With a focus on respecting the plant material, the terroir, and wines, they adopt a minimally interventionist approach both in the vineyard and the cellar. Their vineyard is also currently undergoing a conversion towards organic agriculture. In line with commitment to respecting the fruit and pursuing quality, harvests are entirely carried out by hand.
Pair with white meats, fish, cold meats, tapas. Serve at 15 - 16°C. This is a wine that can be consumed young for its aromas of fresh fruit, but which can also be aged for 5 to 10 years
