Mestizaje is a red wine made by the Mustiguillo Vineyards & Winery. This winery, located in Utiel (Valencia), produces wines from a single plot, the Terrerazo, about 87 hectares of vineyards and other crops.
The uniqueness of their wines is achieved with the Bobal variety as their main variety, this has earned them such notoriety, that in 2010 they received the certificate of Vino de Pago (PDO). Mestizaje is made primarily from the local Bobal variety and small portions of Syrah and Grenache. The grapes are grown at about 800m altitude in vineyards planted on limestone soils. Organic farming vineyard is used in the vineyard. The development of Mestizaje began with a harvest and manual selection in boxes of 15kg. Once in the winery, each variety is vinified separately. First a cold maceration takes place for 24 to 36 hours at a temperature of 8-10 ° C, before a fermentation of about 11-13 days with small pumpings at a temperature of 26 ° C. After the fermentation, one post fermentative maceration occurs lasting between 5 and 8 days. Finally, to round off the wine, malolactic fermentation takes place in barrels for 4 weeks with "batonnages" and the wine is aged in French oak barrels for 10 months.
