With prime vineyards in Casablanca, Maipo, Rapel and Bio-Bio and access to the newest and best clones in Chile (through Jose Guilisasti, brother of Emiliana’s General Manager Rafael who runs Chile’s foremost nursery) Emiliana is a very substantial and impressive organisation. Emiliana is one of the world’s most important producers of Organic and Biodynamic wines. They have a total of 1,117 hectares under vine of which 750ha are IMO and Demeter certified organic. As South America’s largest organic producer, their spectacular vineyard and winery at Los Robles has the added benefit of being biodynamic and features the sensory delights of roaming Alpacas, dung heaps and dynamised biodynamic mixtures to treat the vineyards.

Sourced from vineayrds in the Bío Bío Valley, approximately 500 km south of Santiago. Its soils are clay loam with a characteristic reddish color. The vineyards extend to the banks of this river that lends its name to the valley.

The grapes are hand harvested in the Bío Bío Valley in March witha minimum of 22º Brix in order to achieve a fine balance between alcohol and acidity resulting in a wine that is very fresh and lively. The grapes are then transported to the Las Palmeras winery where they undergo a 12-hour cold soak to achieve better extraction of the aromas from the kins, encouraging better varietal expression. The must is then pressed, drained, and decanted and fermentation begins with selected yeasts at 13º–15º C. Once fermentation is complete, the wine is quickly fined and stabilized and ready for bottling.

The vibrant acidity and the weight of the wine on the palate goes very well with shellfish-based dishes, for example carpaccio, ceviches and fish stews.
