Pale in colour with a slight green edge. Flint, citrus and floral notes on the nose. The palate is fresh and lively, with characters of lemon and lime balanced by a gently textured palate. Savoury notes finish the palate and give the wine nice length and depth of varietal character.
A terrific mild season with a good balance of flavour, texture and acidity. Quite fine and composed.
The fruit is gently pressed and allowed to settle overnight. The juice is then racked to both French oak casks and stainless steel tanks for fermentation. Lees are stirred in late Autumn to build more texture and flavour into the wine.
Pair with pan fried Flathead fillets with lemon and fries.
