This wine presents an intense ruby red color with a touch of violet. The nose offers elegance and a nice balance of ripe black fruit such as black currants and prunes in harmony with a delicate touch of truffle and spice.

Rich ripe fruit and soft, velvety tannins provide elegant structure and complexity, clearly defining the benefits of the place of origin. Flavourful and lush with a nice, long finish.

With 250 hectares of Institute for Marketecology (IMO) and Demeter certified organic vineyards and a further 250 hectares in conversion, Emiliana is one of the world’s most important producers of Organic and Biodynamic wines. Their spectacular Biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world. Jose Guilsasti (viticulture) and Alvaro Espinosa (winemaking) were key to establishing this project but there is a wealth of young talent involved. These innovative wines are made with great care and attention and the results are inspiring.

The hand-picked grapes went through a double selection process, and individual berries were then inspected once again before being gently dropped into the fermentation tank to ensure that only clean and healthy fruit is used. The vinification process began with a 5–6-day pre-fermentation cold soak at 8°–10°C (46°–50°F). Alcoholic fermentation took place in French oak vats with selected yeasts. Temperatures were maintained at 28-30°C (82-86°F) during fermentation, and a program of regular pumpovers was determined by enological criteria. The new wine then underwent an 8–10 day post-fermentation maceration, and malolactic fermentation occurred naturally in French oak barrels. This wine was aged in new French oak barrels for 15 months and then rested another 18 months in the bottle before its release. It was neither fined nor filtered.

Such a hearty wine deserves a herty meal to match...perfect with rich, meaty casseroles, game sausages or strong cheeses.
