Fresh and zesty with grassy and dry bay leaf aromatics, Fynbos (which surrounds the vineyards), mineral notes, with hints of richness. This is a restrained Sauvignon Blanc with a palate that has lots of minerality and citrus with just a touch of green pepper and grass.
The winter was optimal with sufficient rain to fill the dams and provide enough cold units in July to have the vines in full dormancy. From August the temperatures started to rise slowly and spring arrived early with flowering occurring under ideal conditions, which ensured even ripeness, an excellent contribution to quality. There were slightly windy conditions during this stage, which resulted in looser bunches and helped to attain lower yields and more concentration. Rainfall decreased dramatically from September, with warm, dry weather and less strong winds than usual. Throughout the growing season temperatures remained moderate, with intermittent hot days. Veraison started about 2 weeks earlier than usual. For the rest of the growing season very little rain was seen which resulted in very low disease pressure. Even though the days were warm the evenings cooled down very nicely. The 2015 harvest was the earliest to date. Picking started approximately two weeks earlier than usual due to the early flowering in spring, but hang time was sufficient to allow phenolic ripeness. The quality of the fruit was exceptional: low pH, high acidity and clean fruit with little to no rot.

The meticulously selected sites include the Perdeberg, Stellenbosch and Schapenberg regions which impart delicious flavours and crisp natural acidity to the wine. These vineyards allow for slower ripening, a greater natural concentration of flavours and a long finish. Depending on the slopes and the fertility of the soils in these areas, flavour profiles can range from the more tropical gooseberry and lychee to racy green pepper, or even herbaceous asparagus. Although further from the coast, the whole of Table Bay is visible from the Perdeberg vineyard used.
Made by Waterkloof's talented young Cellarmaster Nadia Barnard. From the 2015 vintage they upgraded the fruit source for this wine to the more coastal hills of Stellenbosch. This windswept Sauvignon Blanc is not concocted from over-croppped grapes, nor pumped up on clever winemaking additives. This authentic wine comes from cool, windswept, ocean-facing vineyards. These gems give up meagre yields of small berries, imbued with their own natural acidity and intensity. Balanced grapes are hand harvested, then a portion of the juice is fermented spontaneously with wild yeast and the rest is inocculated. The wine spends a minimum of 5 months on lees before bottling.
