Refreshing soft berry fruit nose flows into the palate to offer flavours of wild strawberry in spring woodlands. Bright and exciting, this wine is both enticing and elegant, pretty with finesse.
For over three decades Boutinot has been based in the Mâconnais in southern Burgundy; relying upon Samantha Bailey to craft and blend wines which honestly express the tapestry of the local terroir. With a ‘back of the hand’ knowledge of the effect of each slope and soil type on a wine, we dared to imagine owning an estate, yet such opportunities are rare in Burgundy as domaines pass from one generation to the next.
After numerous tastings, we selected elements from two different gowers. This cuvée of Pinot Noir was selected for its purity and elegance. Classic vinification with cuvaison of 6-8 days – neither too little or the wine is weak, nor too much or the wine is too tannic – this is the secret to mastering Pinot Noir and allowing the expression of fruit and finesse. After malolactic fermentation our two elements were blended, and left to rest in the cellar for a couple of months prior to bottling in order to enhance the harmony and create a wine with enough tannins to provide underlying structure and longevity whilst offering some immediate up front fruit.
This wine will pair beautifully with lean meats, carpaccio or a classic roast chicken. Mild cheeses such as brie would also work really well.
