Made from completely destemmed grapes which are fermented at cool temperatures in stainless steel tanks for 20 days. Further ageing also takes places in steel. Patriarch of the Lavau family, René Lavau transformed a small estate in Tunisia into the country's biggest wine producer in the early 20th Century, and this wine is named in honour of those times and those wines, with "Koudiat"meaning hill in Arabic.
