This complex and indulgent MCC shows clarity of fruit on the nose. Hints of lime are accompanied by aromas of toasted bread and hazelnut. The palate is creamy, round and textured with an explosive acidity and lasting, elegant finish.
KWV is one of South Africa’s leading wine and spirit producers, with an impressive international reputation and history. We love how their dynamic winemaking team are bringing an innovative approach and modern wine styles.
KWV has 72 growers from every region of the Western Cape so it has unrivalled access to all South Africa’s wine regions and grape varietals, from cool climate Walker Bay Sauvignon to hot and arid Swartland Shiraz. Its winemakers work closely with the vineyards and the results shine a light on South Africa’s amazing regional strengths.
The grapes were hand harvested into bins in the cool of the morning. They were then whole-bunch pressed and only the best cuvee juice was used for the final blend. A selected yeast strain was used for primary fermentation. No malolactic fermentation was permitted to ensure freshness. The wine was blended, bottled and underwent a secondary fermentation in the bottle. This was followed by bottle maturation of approximately 48 months. Only then it was disgorged, corked and labelled.
This Cap Classique was matured after the second fermentation, in bottle, for approximately 48 months.
Enjoy this bubbly well chilled and on its own, or with oysters, sushi and other delicate seafood dishes.
