This wine has complex aromas, with hints of acacia and violet followed by white peach, apricot and mango. On the palate it has a full texture, with freshness, finesse and a long finish with floral notes.

From Château de Lascaux, based at Pic Saint-Loup in the Languedoc, the biodynamic Les Garrigues Blanc is produced from mainly Vermentino and a touch of five other southern French grapes.

The vineyards of Château de Lascaux have been in the same family for fifteen generations, but it is current owner Jean-Benoît Cavalier who officially established the Domaine when he took on the property in 1984. He consolidated and took over some new vineyards, taking the estate from 25 to 85 hectares, and restructured the ancient cellars.

Lascaux is surrounded by three-hundred hectares of forest, filled with green oaks, pines, and garrigue. The quiet isolation of this part of the region, coupled with its proximity to both the sea and the mountains, makes for a very unique microclimate. The stony soils lend elegance and freshness to the wines, and the garrigue - with notes of laurel, thyme and rosemary - is reflected in the aromatics of the wines.

The vineyards are located at 130 meters up hill on a gently sloping south-east facing slope. The clay-limestone soil is composed of clay loam and fragments of limestone from the erosion of the slopes, alternating with marls and marly-limestones.

Jean-Benoît is passionate about supporting the richness and diversity of this ecosystem, so the Domaine's conversion to organic viticulture was a logical choice. They gained their organic certification in 2009 and their Biodynamic conversion was approved in 2018. The Château de Lascaux wines are generous, friendly wines of superb quality and excellent value for their price category.

Harvest by machine or by hand according to the plots. Entirely destemmed. Pressing after a short skin cold maceration. Cold settling without excess. Aging in stainless steel tanks during 4 to 5 weeks with lees.
