A bright yellow colour with green highlights. The nose is rich and subtle, with fresh notes of white flowers. The palate is nicely rounded and very fresh with good structure and a nice palette of aromas.
The Rainbow Wrasses. Light stony limestone soil on a plateau surrounded by pine forests and overlooking the lake of Tau. Mediterranean climate and vegetation (thyme, lavender, live oaks, pine trees…) with maritime influences. Vinified traditionally, with a long fermentation at low temperature followed by quick bottling to preserve its freshness and fruit.
Pair with small fried fishes, goat cheese or with a seafood platter shared with friends! To be drunk in its youth. Serve chilled to 12°C.
