Ripe and hand selected Riesling grapes are slowly fermented in stainless steel tanks before a lengthy fermentation on the lees. Purification in wooden barrels follows and the result is a delight – a fresh and expressive wine with succulent pears, apricots and peaches on the nose, good Riesling character and a softly spicy finish.

With Austria being the second largest organic farming community in Europe and Rudolf Steiner, a founder of biodynamics, being Austrian, we were spoilt for choice of a supplier from this minor wine-producing country. Toni Soellner’s were the wines which stood out. He began growing grapes in 1989 and was joined by Daniela when they married. Biodynamic methods are used on 6 terraced sites.
