This wine has a floral top note of roses, sweet cherry, and hints of plum. The palate is medium bodied with lots of fruit, dark berry compote, rhubarb, supported by well-integrated oak, with a hint of warm spices. Fine tannins give strength and backbone and will allow the wine to bottle age well.
Each component was harvested separately, de-stemmed and sorted into tank. The wines spent between 10 and 30 days on the skins, depending on the tannin structure. Three or four pump overs per day and then pressed to undergo malolactic fermentation in tank. After completion, the wine was racked to French oak barrels (31% new, 20% second fill, 36% third fill and 13% older oak was used) for a period of 12 months before blending and a light filtration before bottling in November 2020.
60% Pinotage, 32% Cabernet Sauvignon, 8% Cabernet Franc
