Delicate, aromatic nose, this wine is herbaceous with ripe weighty fruit on the palate. It has a good linear structure with a gentle complexity and freshness on the finish. A wine to lay down - the high proportion of Sémillon will benefit from a little bottle ageing.
Xavier & Caroline Perromat took over the running of the 18th century Château (in the heart of the small village of Cérons) and the 26 hectare estate from his parents in 2012. Viticulture is sustainable; wine-making is precise producing wines with a fine minerality and balance. The vineyards are on a plateau of gravel over limestone overlooking the river Garonne, perfect terroir for Sémillon in particular.
Grapes were hand harvested in late September, whole bunch pressed and fermented in stainless steel with 4-6 weeks of lees stirring. The wine was aged in temperature controlled stainless steel tanks and is completely unoaked.
Perfect for whole sea bream, cooked on the barbecue and served with homemade mayonnaise and a tomato salad.
