Beautiful pale yellow color, very bright, expressive nose of white peach, a hint of menthol that declines with agitation on the fresh pear with notes of honeysuckle and mango just opened. The attack is frank, the mouth is full, voluminous and fat, an aromatic explosion of mango, pear and peach in syrup, the well-stretched frame lengthens the persistence with a salivating and vinous final. Very nice balance, chewiness and great purity for this invigorating wine.
The grapes are rapidly handpicked so that the crop stays healthy as possible. They are pressed inmediately with a pueumatic press in order to respect the grapes. Light usage of the sulfites, followed by the decanting of the wine. Fermentation in the vat, whilst controlling temperatures. The maturing process on fine lees in tanks being stirred every two days to bring out more complex flavours (floral and exotic fruits) and to make the wine softer in the mouth. It is filtered before the bottling process.
Will be the ideal companion to a starter based on prawns, grilled fish or even goat cheese.
