Meticulously hand-picked grapes, some parcels were picked in two times. Manual sorting directly on the bunch and in the winery. Cold pressing and settling. Aged in stainless steel tanks, large format vats and 225l and 500l barrels of which new oak is used. Oak ageing is carefully controlled to integrate the complexity of the oak and respect the freshness of the terroir and the natural aromas of the grape varieties.
