This dangerously smooth wine oozes with elegance - delicately spiced with scrumptious red berry notes, and a touch of dark chocolate on the finish. On the nose you find a rich melody of oaky vanilla, tobacco and a hint of coffee. This beauty is best enjoyed with a medium-rare steak and triple cooked chips. Similar to a full-bodied Merlot, this wine packs a real punch!
The vineyard comprising uniquely different terroirs is characterized by shallow soil, laid on an impervious subsoil sandstone slab. The most beautiful Cinsaults are grown on hillsides to ensure maximum exposure to the sun. Nearby and slightly lower down, is a great plot of Rolle (Vermentino), a grape known for its fruity notes of citrus and pear. La Grande Pièce is a magnificent parcel on a plateau entirely devoted to Syrah. Lastly, on the Perrono plot, named after the family that planted the first vines on the property, young white and black Grenache vines have joined the magnificent Syrah already established there. Grapes are harvested at night by machine and vineyards are ploughed using horses. Vineyards are organic, sustainably cultivated and are certified ‘bee friendly’.
Fermentation takes place between 20 and 26°C with regular pumping over while avoiding over extraction. Fermentation and maceration lasts no more than 4 weeks softening the tannins and part of the wine is aged in barrel to give greater aromatic complexity.
Looking for pairings with beef, lamb, any spicy food. Also, hard cheeses and poultry.
