Deep in colour and powerful on the nose, this single vineyard Malbec from the high altitude Valle de Uco sub region of Mendoza offers aromas of fresh and vibrant dark berries, vanilla and chocolate, great structure and a persistant complex finish.

Traditional winemaking methods were used including a 3-day cold prefermentative maceration. The wine was fermented in concrete vats without an epoxy coating for 17 to 20 days. The cap was subjected to punching down and pumping over. Fermentation temperature: 25 oC / 77 oF. Aged for 12 months in 225-liter oak barrels, 500-liter casks and 3500 liter ourdres, and further aged in the bottle for another six.

A great partner to red meat dishes, particularly when a rich sauce has been used. Try it with a slow braised lamb shank with parsnip puree for example.
