This GCM blend is an intense red colour with violet hues.

The nose is very intense, displaying fresh red fruit, such as raspberries and blackcurrants. There are also some earthy notes and a touch of black pepper.

The palate is very expressive. This is a medium-bodied, very refreshing wine, thanks to its high acidity. Packed with fruit, such as cherries, it has gentle tannins and is long in the finish.

Reflecting its origin in Apalta, the hillside location of the vines and its blend of three varieties, Grey GCM is a complex wine.

The clusters were carefully selected and then half of them were crushed. The grapes went into 400-kilo open vats to undergo pre-fermentative maceration for three to five days. The grapes began to ferment gently at a low temperature. The fermentation took place at a controlled temperature of between 22°C and 26°C (72°F to 79°F) with two to three daily pump-overs. The wine underwent a post-fermentative maceration of one to two weeks to balance the tannins. 100% of this wine was aged for six months in fifth-use, ultra-fine grain French oak barrels. It was then bottle-aged for at least one month.

This wine is ready to enjoy now but will improve in complexity in the next three to six years if the wine is kept at controlled temperatures. We recommend that this wine be decanted 30 minutes before serving. This wine was neither clarified nor filtered, so over time a sediment may appear.

It is best served at a temperature between 14°C and 17°C to maintain its freshness.

This wine pairs well with sausages, cold cuts, Serrano ham, lamb and pork. It is also delicious enjoyed on its own out-doors.
