Brilliant water like core with greenish tinged edges. Zesty lime and lemon aromas blossom from the glass with a hint of green apple, wet steel and mineral also present. Mouth watering flavours of lime juice and lemon combine with crunchy fresh acidity. Dry steely finish with plenty of minerality also present. Long laser like aftertaste with lingering wet steel, lime, lemon and mineral characters.

From nineteen year old vines on heavy Loam and Terra Rossa soils in the White Hut sub-region. 500m above sea level, hand picked fruit, whole bunch pressed, cool ferment with selected yeast. Aged in concrete for 8 months.

Drink on its own, as an apéritif or pair with fish dishes and hors d'oeuvres.
